- 3 tablespoon heaped all-purpose flour
- ½ teaspoon baking powder
- Pinch of Soda bicarbonate (baking soda)
- Salt and pepper to taste
- ¼ teaspoon crushed chilies (optional)
- ½ cup milk (as required)
- 1 large egg
- 2 tablespoon sweet corn (softened)
- 2 medium-sized zucchini (grate them)
- 1 tablespoon finely chopped bell pepper (optional)
- 1 tablespoon finely chopped carrot (optional)
- 1 tablespoon oil
- ½ teaspoon cumin seeds
- Pinch of sesame seeds (optional)
- Pinch of black seeds (optional)
- Pinch of flax seeds (optional)
- ½ teaspoon smac (optional)
Directions Zucchini Corn Fritters Recipe
- In a large bowl sift flour, baking powder, and soda bicarbonate
- Add egg, grated zucchini, carrot, sweet corns, bell pepper and all the spices salt, pepper, cumin etc. and oil.
- Pour milk little at a time and mix with a spoon or spatula or spoon.
- The choice is yours you can keep the liquid thick or watery. But it should not be so watery but just the consistency should be like pancakes batter.
- Now heat up any nonstick pan or wok and brush it with oil and pour ½ cup of batter in it and let it cook for some time on the very low heat.
