Instructions:
- Sauté the Onions: Heat up the cooking oil in a large skillet over medium heat. Add the finely chopped onions and sauté until they turn translucent or change the color.
- Add Tomatoes and Tomato Paste: Stir in the diced tomato and tomato paste. Cook for a few minutes until the tomato starts to soften and meld with the onions, creating a flavorful base. This step is important, if you will not let the tomatoes melt now, later they hardly melt and if you have kids at home, then they will be taking them out, if you have picky eaters at your home like mine. Best is to cover and let cook and you can still occasionally to turn it into a smooth paste.
- Incorporate Chicken and Spices: Add the boneless chicken pieces to the tomatoes and saute onion mixture, and season the mixture with salt, black pepper, and your choice of all-spice mix. Continue cooking until the chicken turns white and is no longer pink in the center.
- Introduce the Vegetables: now its time to add your vegetables. Add the peas, diced carrots, and cabbage (cauliflower florets), green capsicum, with the chicken. Mix everything well. Sauté them with chicken for a few more minutes until they begin to soften a bit.
- Simmer to Perfection: Lower the heat, cover the pan, and let the flavors meld together. Cook for an additional 10-15 minutes, stirring occasionally. If the mixture starts to look dry, you can add a splash of water to maintain a desirable consistency. Wait till the oil shines and start to separate. This is actual indicator that everything is cooked properly.
- Serve with Your Choice: dish out this delightful mixture with your preferred choice of side dish. Whether it’s boiled pasta for your daughter, rice for yourself, or bread for your husband, this savory tomato and chicken vegetable medley is a versatile and delicious treat for your taste buds.
