Nan Khatai Recipe
This is yummiest Nankhatai (biscuits) Recipe that you will ever try. Nankhatai Recipe has many versions and these are actually biscuits that are popular in India and Pakistan. I bake Nankhatai many times and every time my family and friends simply love these, crunchy biscuits.
This Nankhatai Recipe will make 5-6 dozen Nankhatai or biscuits. You can always adjust the ratio if you want to cook less, but if you cook more, you can always save them in an airtight jar for months.
Ingredients:
- 4 cups All-purpose Flour
- 2 cup caster sugar,
- 2 cup organic ghee ( recommended but you can use butter or oil too)
- 1 tsp baking powder,
- 1/2 tsp baking soda,
- 4 tbsp gram flour (besan),
- 4 tbsp coarsely crushed Almonds,
- 1 tsp cardamom powder,
- 2 egg yolks (for egg wash)
Directions:
- Preheat the oven to 180 degrees.
- Line a baking tray with butter or parchment paper and set aside.
- Take a large bowl and beat together (oil) or ghee, and sugar until mixed well.
- Now take another bowl and sift together all purpose flour, gram flour, baking powder, and baking soda.
- Now add the oil and sugar mixture in the dry ingredients slowly, slowly, not all at once, depends on how much you need. Slowly add the batter and then make a soft dough.
- Put the dough in an airtight box and refrigerate for 20 minutes as it may be sticky and hard to handle.
- Take out the dough from the refrigerator and using a rolling pin roll the dough to make a bread 1/2-1/4 inch.
- Take a cutter and cut Nankhatai with it.
- If you do not have a cutter, use any cup or glass or even glass bottle to cut the biscuits.
- Now place cookies on a baking tray.
- Brush with egg yolks wash and add some crushed almonds in center of the Nankhatai (biscuit)
- Bake in preheated oven for 15-20 minutes.
Your Yummy Nankhatai is ready. Enjoy with tea or coffee.
