Vegetable Bites or Vegetable Muffins
I always experiment with recipes so my kids like and eat what I cook. Today I prepared small vegetable bites or vegetable muffins and I shared with my friends too. Not only my kids but also my friends loved them. This is the best way to eat or feed as many vegetables you want. There is no restriction on the choice of vegetables. Be flexible and add the vegetables as per your taste.
The whole process will take 30 – 45 minutes.
Ingredients:
- 1 small Broccoli
- 1 breast piece of Chicken
- ¼ part of medium Butternut squash (butternut pumpkin)
- ½ Avocado
- 1 medium size Potato
- 3 tablespoon Sweet Corns (boiled and softened or use canned)
- 1 tablespoon Raisins ( use any type)
- ½ inch piece of Ginger
- 1 stalk Spring Onions (green and white part)
- Handful of Coriander (or to taste)
- ½ Bell Pepper (any color you like, I used green)
- 150 g Cheddar Cheese
- 200g Mozzarella Cheese
- ½ teaspoon of Black pepper (or to taste)
- ½ teaspoon of salt (or to taste)
- 2 tablespoon lemon juice.
- 2 cups of water to boil chicken pieces and broccoli pieces
- 1 eggs
- 250g olives sliced ( add ¾ quantity with other vegetables and keep ¼ for garnishing)
- ½ teaspoon black seeds to sprinkle on top.
- 2 level tablespoon of dried Oregano to sprinkle on top.
- Medium size Ice cream scoop
- Shredder
- Knife
- Kitchen towel( to press, squeeze and drain excess water from broccoli)
This quantity will make 15- 23 vegetable bites or vegetable muffins.
Directions:
- Wash your hands first and then wash and rinse all the vegetables properly.
- Preheat your oven to 180 degrees.
- Take chicken breast piece and cut in small cubes.
- Now cut broccoli into small pieces.
- Take a pan add water over medium-high heat and let it boil then add chicken and let it soften, once done take out from hot water and let it cool in a plate.
- Once chicken cools down using your hands or fork break chicken in small crumbs.
- Now add broccoli in warm water in a pot over the fire and steam it for 2-3 minutes to soften, once done, take out broccoli in a strainer and let water drain properly.
- Now place broccoli in a kitchen towel and bring together all the corners of the towel, hold tight and then press the broccoli to remove excess water.
- Shift broccoli in some bowl and using fork break in small pieces.
- Soak your raisins for few minutes then drain water, rinse properly and set aside.
- Peel Butternut pumpkin, avocado, ginger using a knife, but be careful do not cut your hands.
- Take a large bowl and shredder and grate Butternut, potato, and ginger.
- Now with a knife or a scissor chop coriander, spring onion finely.
- Now cut bell pepper and avocado into small cubes.
- You are done with cutting and shredding, now time to mix all the ingredients.
- Take a large bowl and add all the vegetables; broccoli, butternut, avocado, potato, bell pepper, ginger, coriander and spring onion.
- Now add shredded chicken, raisins, sweet corns, cheddar and mozzarella cheese, olives.
- Sprinkle lemon juice, salt, and pepper.
- Add one egg and mix everything properly so all vegetables will be well combined with cheese etc. You can use your hands or spoon or fork.
- Now take a baking tray and line it with butter paper or aluminum foil, you can use cupcake mold too to make vegetable muffins.
- Now using your ice cream scoop add one, one scoop of vegetable mix on to tray on a small distance. Press down with spoon or fork to flatten a little. Or you can fill the cupcake mold too. If they are not nonstick grease them with little oil.
- On top add some mozzarella cheese and garnish with one olive and sprinkle oregano as much you like and black seeds.
- Bake in the oven for 7-12 minutes. Depends on your oven. You can have a look at them once or twice.
Dish vegetables bite or vegetable muffins (if baked in cupcake mold) out and enjoy with ketchup, mustard or mayonnaise. They are good even without anything as well, trust me.
I have shaped them in circles, you can make any shape that you like. You can use cabbage, green peas, chickpeas, carrots, pumpkin, zucchini etc. as per your taste.
Though process it bit long but worth trying.

Note:
There must not be any water left in your vegetable mixture. If you feel it is watery, you can squeeze the mixture to remove the water or simply scoop out the mixture on the edges of teh plate leaving the middle space empty and microwave 3 minutes, all water will collect in middle. Discard the water and continue with the recipe. If the mixture is soaggy you have to end up making pan cake rather bites 🙂
