Vegetable Balls recipe
We are all aware of the importance of vegetables. My kids are never happy with the vegetables so I am always trying different methods to feed them with vegetables. I tried many times chicken kebabs with the vegetables and also meatballs with few vegetables but today I will show you how I made vegetable balls. This vegetable balls recipe is full of so many vegetables. I fried vegetable balls as my kids like this way but you can also bake these vegetable balls to have an even healthier version of vegetable balls recipe.
You can add any vegetables of your choice like peas, spinach, asparagus etc.
Ingredients vegetable balls recipe:
- ¼ medium size onion (Finely chopped)
- 1 and ½ medium-size potato (boiled and mashed)
- ¼ medium size tomato (finely chopped)
- 2 tablespoon of sweet corns (softened, if you like you can mash them but I used whole)
- 2 tablespoon of cabbage (finely chopped)
- 2 tablespoon of cauliflower (finely chopped)
- 1/2 carrot (grate it)
- 1/2 zucchini (grate it)
- 2 egg (one to add inside batter and other to coat the balls)
- 1-tablespoon cornstarch
- Salt, black pepper, paprika (to taste)
- ¼-teaspoon cumin seeds
- ¼-teaspoon coriander powder
- 1 tablespoon of chopped green coriander
- Breadcrumbs to coat the balls
- 1-cup all-purpose flour to coat the vegetable balls
Directions vegetable balls recipe:
- Take three medium-sized bowls.
- Add all-purpose flour in the first bowl, sprinkle some salt and black pepper, breadcrumbs in the second bowl, egg in third one, whisk the egg gently and set aside.
- In a large bowl add all the vegetables; onions, tomatoes, mashed potatoes, sweet corns, cabbage, carrot, zucchini, and cauliflower.
- Sprinkle with salt, black pepper, paprika, cumin seeds, coriander powder, and cornstarch.
- Break one egg into the mixture.
- Using a spoon, spatula or your hands (please wash your hands with soap) mix the batter very well so all the ingredients will be well corporate and try to knead a bit so the mixture will like a dough and can come together in form of the ball.
- If you cannot make the balls leave the mixture in the refrigerator for about an hour and then try to make the balls.
- With an ice-cream scoop, a spoon, or your hands take out some mixture and make balls with the whole mixture.
- Roll the balls in the all-purpose flour then egg and then breadcrumbs and place in a plate.
- Once done with all the balls then heat up oil in a wok or frying pan and fry the balls on low heat.
- When the color will be nicely golden brown then take out on a kitchen towel to remove excess oil and enjoy with any sauce of your choice.
Note:
- You can prick a toothpick or skewer in each ball to give it a Vegetable lollipop style.
- You can also add minced chicken if you like.
