Recipe of Boneless Chicken Handi
Boneless Chicken handi is also called White Chicken Handi
There are hundreds of recipes for chicken all around the world. When it comes to South East Asia, we do not like to eat grilled food much but are forced when on diet. Rest we like spicy full of oil dishes and the chicken, you can see ingredients swimming in a lot of oil.
Today, I will be sharing the recipe for chicken handi boneless. This is one of delicious and famous boneless chicken dish that people make. Chicken Handi recipe is very easy to make. There are many versions of chicken handi boneless on the market and our home. I will share one of amazing boneless handi recipe today. I love to make chicken handi boneless when its cold or I have some visitors. You do not need many spices for it just with simple spices and with cream you can get an authentic taste at home easily.
Most of the time, we prefer to use boneless chicken for the Chicken Handi. There is no restriction if you follow the recipe the taste will be same, even with the bones but make sure to cut the pieces small.
Normally our mothers prefer to make in Handi that is an earthen pot but hardly we buy those pots now, you can go easily with any pot or pan that you use for cooking in your cooking.
Let’s see the ingredients of Chicken Handi. Obviously, chicken is most important part of this dish. I will prefer going with boneless pieces of chicken.

Ingredients for the Recipe of Boneless Chicken Handi:
• ½ kg Chicken boneless cut into cubes almost 2-3 inch in size.
• ¼ cup or 250 g Yogurt
• 3 tablespoon Ginger garlic paste
• ¼ cup or 250 g unsalted Peanuts
• Green or red chilies ( according to taste, I used 3)
• 1 and ½ tablespoon Sesame seeds
• Salt according to taste ( I added 1 tablespoon)
• 1 & ½ teaspoon Black pepper Powder ( freshly ground will enhance the taste, if you have the option, use them)
• ¼ Cup or 250 g Fresh cream
• 4 Tablespoon Oil for cooking
• 2 tablespoon Butter ( room temperature, preferable)
• 2 Green cardamom
• ½ teaspoon Cardamom powder
• ½ teaspoon coriander powder
• Fresh green Coriander chopped according to taste ( for garnishing)

This Chicken Handi recipe will almost take one hour as it has three steps for preparation.

First, you have to start by making a paste.
In a blender dump your;
Yogurt,
Peanuts,
Sesame seeds
Green Chilies.
Blend all ingredients for at least 1.5 minutes. This time depends on the power of your blender. The mixture must be creamy and smooth without lumps. Some blender doesn’t blend well so you can add water just 3 tablespoons at most. Otherwise, the liquid will be so watery and will not do the magic.
Now you have to shift this paste to a large bowl. Add in ginger and garlic paste, coriander powder, black pepper, cardamom powder salt and the fresh cream. Mix them well with a spoon.
Wash the chicken cubes and drain water properly by leaving it in any strainer for 5-10 minutes( by the time you make paste the water will be drained) Put these chicken cubes in the mixture and try to coat the chicken pieces well with the mixture and then marinate for almost 30 minutes.
If you can marinate overnight the taste will be amazing, as long marination will let the ingredients absorb in the chicken well.
Now it is time to cook the marinated chicken. Take a pot if you have handi (earthen pot use that) lit the fire to high, add oil and butter, let it get little warm then add green cardamom and then after 10 seconds add the marinated chicken and with your spoon mix oil and chicken well.
After mixing well cover, the pot with the lid and cook for three minutes on high flame and then on low flame for 15 to 20 minutes, in between the interval-using spoon occasionally give it a stir until chicken is done. The indication is the chicken will leave the oil (low flame 15-20 minutes).
Top it with green coriander turn off the flame and cover it for 2-3 minutes.
